Most successful chefs are NOT vegetarian. They do make the use of veggies to compliment the main course, and in many countries….Veggies is all you get. To the chefs who travel the world??? Kudos to you. They make it a personal experience.
What we don’t understand is why? Love of people? Love of food? The ability to separate the two, or not. Smells of certain foods, trigger emotional memories. Money, and the lack of it can also put us to pasture. We miss the commentaries from far away lands.
The legacy here is that it is history, and stories. Remember the good ones.
